26-unit apartment complex and sweet shop cafe among the latest developments in Easton

More development could potentially be on the way in Easton, where the city’s Zoning Hearing Board granted conditional approval for two new projects Monday night; an apartment complex with up to 26 units in the West Ward and a cafe serving cakes and pastries alongside fresh cut flowers in the downtown.

The apartment complex, to be located in existing buildings at 16-26 S. Sixth St. and 521 Pine St., is being proposed by developer Lou Pektor, who is working with Easton architect Jeff Martinson. The project is being proposed under the name Pine Street Plaza LLC.
